Mr. Yuji Kobayashi's master who carries foot to Tsukiji on a daily basis and faced directly with the food material itself without concern for the production area. So the recipe for the ingredients chosen is quite simple. Cooking that made the utmost effect with minimal work has been gathered in the equipment of Suda Takaharu and Kawase Takeharu who has been collecting for 20 years and further increases its radiance. Both Japanese cuisine and antiques are those that inherit the traditional type. Cooking that the idea passed through tells us that it is fresh even if you eat with plentiful wine.
